Cardamom Spice

CARDAMOM Spice Flavor Profile:

Cardamom is used in both sweet and savory dishes from Morocco to India to Scandinavia, and with good reason – it’s incredibly versatile and has a wonderful, distinctive flavor. It’s often blended with floral waters like orange blossom to create a layered taste experience. Pairs well with nuts, fruit, chocolate, caramel, coffee, black tea, pumpkin…

And since we get asked all the time what it tastes like –  if you’ve never had cardamom before, think of Chai or rice pudding; it’s a dominant flavor in those dishes. Sweet, spicy, herbal, and cooling all at once. (if cinnamon, ginger, and mint had a baby, you might call it cardamom.)


Founder’s Notes:

The very first ice cream I ever made from scratch was for a dinner party, and it was a cardamom flavor, served with a garam masala blondie, mango coulis, and peanut brittle. Try using it instead of vanilla to give a unique twist on a standard dish (say, apple pie). I love mashing toasted pistachios into it and my mom puts a dollop in her coffee instead of cream & sugar.

Darkest Chocolate

Darkest Chocolate Flavor Profile:

Imagine combining the deep, complex flavor of dark chocolate with the satin smoothness of fine milk chocolate. What you get is ultra creamy, intensely chocolatey, and slightly dry on the finish. If that reads to you like a fine wine, it's with good reason: let it breathe and it gets even better. Pairs well with any of our other flavors (or pretty much anything you want...it's chocolate!).

Founder’s Notes:

Even when I was eating dairy ice creams, I found most chocolates weren’t strong enough for my taste. It was one of the first flavors I tried to veganize, and the first that convinced me there was real potential here to make something special. We taste-tested a LOT of chocolates and cocoas and recipes – tough work – to find the right sources and right balance of flavor and texture (strong and smooth). Our best seller and winner of the 2017 Flavor of GA competition (in the dairy category), it’s formerly known as “Chocolate Fantasy” because it’s everything I want in chocolate ice cream.

French Press Chocolate

French Press Coffee Flavor Profile:

We make an in-house 24-hour cold brew with so much coffee that even after adding the rest of the gelato ingredients, it’s as strong as a cup of brewed coffee. The single-origin coffee we use is called “Dirty Nekkid” because it’s made using a natural 'unwashed' method that retains the beans' inherent sweetness. It’s a full roast with big body and earthy, chocolatey notes. Try mixing it with a scoop of our Cardamom Spice to create your own ‘Arabic Coffee’ flavor. And of course you can always add chocolate or caramel for the ultimate pairing.



Founder’s Notes:

I’m particularly proud of this flavor. Not only because it won 2016 Flavor of GA (in the dairy category), but also because of the story of these beans. The coffee comes from an Atlanta husband-and-wife team whose family has been growing the beans sustainably in the mountains of Nicaragua for six generations — Selva Negra has literally been called one of the most sustainable coffee farms in the world. It's what I use in for my own morning french press and I wouldn’t change a thing for our gelato.

Full Throttle Vanilla

Full ThrottlE Vanilla Flavor Profile:

We take issue with the reputation vanilla has earned as being “plain”. You’ll never taste a vanilla quite like ours, which highlights the rich complexity of the second-most expensive spice in the world by combining three distinctive varieties – Tahitian, Madagascan, Mexican – to provide balanced and full-bodied flavor from start to finish. Fantastic on its own, it will also beautifully complement nearly anything you wish to pair with it.

Founder’s Notes:

One of the happy accidents in making this was the discovery that the different vanillas come through at different times as it melts in your mouth. It also means that each profile’s prominence will vary depending on what you eat with it. With a fruit pie, you might notice the cherry and anise notes of the Tahitian most. With chocolate cake, perhaps it’s the spiciness of the Mexican that lingers. Drowned in a shot of espresso (‘affogato’), the creamy Madagascan may be most pronounced. Hmm, seems like you’ll just need to experiment and see what you taste…

Majestic Mango Flavor Profile:

Alphonso mango is the variety that has come to be known as 'King of Mangoes' due to its silky smooth texture and enchanting aroma. Naturally, we settle for nothing less than the best (and lots of it). With a thick, velvety body and bright flavor, this is gelato fit for royalty. Pairs well with Cardamom Spice, Darkest Chocolate, and Full Throttle Vanilla.

Founder’s Notes:

I first came across Alphonso mango in cans at Indian grocery stores. Once I tasted it, I was hooked. Like with most of our gelato recipes, I started by trying to put in too much mango, and then dialed it back to get the texture right. As it is, this gelato is over 40% pure organic mango. The downside? It’s kind of ruined supermarket mangos for me.

Orange Cream

Orange Cream Flavor Profile:

Creamsicle, Dreamsicle, Push Pop, Orange Sherbet, Orange Julius...whatever you knew it as growing up, it’s time for a trip down memory lane or a miraculous new discovery in your life. The experience starts when you open the lid to the scent of fresh orange. Then the gelato hits your palate and flavors arrive in waves. Top notes of bright orange zest slowly fade and blend with the smooth vanilla, cut with a pleasant tang from the orange juice. Pairs well with Darkest Chocolate.

Founder’s Notes:

This was a flavor created on a whim – I was working on our vanilla and had just received some samples of orange oil. I just can’t help but play around in the kitchen! But it turned out so well from the start and was such a nostalgic callback, we had to include it in our initial lineup.
